Billa pehalwan da dhaba

Our dhaba is right in the Main Bazar of Tehsil Pura here in Amritsar. We are easy to find because we are right opposite the old Sangam Cinema. Billa pehalwan da dhaba has been a part of this street for quite a while. The bazaar is always loud with people shouting and bikes zooming past, especially in the evenings when a movie is letting out. We don't have any fancy decorations or soft chairs, just the regular stuff you find in a local dhaba. We start our day early to get the fire going and start the preparations. It gets very hot near the stoves, but we are used to it by now. Most of our customers are locals from around Tehsil Pura or people who just finished watching a show at Sangam. We don't have a big team, just a few of us who know how to get the work done. The menu is simple and we don't change it much because people like what they know. Sometimes the market gets so crowded that it is hard to even walk, let alone run a business, but we make it work. We spend most of our time in the kitchen or out front talking to the regulars. It is a lot of work and our clothes usually smell like smoke and spices by the end of the night. That is just how life is for us in Amritsar, and we just keep the pots boiling every single day.
