We are over in Tagore Garden at FC-94. It’s a spot in West Delhi where Nischal Kitchen Masala Private Limited does its thing. As the name says, we deal with masalas. The air around our place usually smells like cumin, coriander, or chili. It’s a strong scent that stays with you all day. We aren't some big factory with robots. We are just people who know how to mix spices. We spend a lot of time weighing out bags and checking the quality of the seeds. It’s messy work, and we usually end up with spice dust on our clothes. Tagore Garden is a nice neighborhood, and we’ve been here long enough that people recognize us. We don't use any fancy marketing tricks. We just sell what we make. Sometimes the grinding machine breaks down, and we have to spend the afternoon fixing it. That’s just how it goes when you’re running a small operation. We keep things basic. No big offices or fancy desks. Just some tables, scales, and a lot of bags. We’re just trying to make sure the spices we put out are what people expect. It’s a lot of hard work and long hours, but we don't mind it much because we like what we do. It’s a straightforward business and we plan on keeping it that way for as long as we can stay here.
