Vijay China Town is near the Vetal Maharaj Mandir in Fatepura. It’s a lively spot to be, especially on festival days when the temple gets crowded. We have the woks going almost constantly in the evening. The sound of metal on metal and the hiss of the flames is what you hear most when you’re standing near our counter. We keep the menu pinned up on the wall, nothing fancy. It gets a bit smoky inside when we’re busy, even with the fans running full blast. We don’t have a lot of seating, so most people just stand around waiting for their parcels or eat quickly and head out. We spend a lot of time prep work, cutting cabbage and peeling ginger until our fingers are sore. The street outside is usually full of bikes and people walking to the temple. We have to keep a sharp eye on the supplies because we go through a lot of sauce and oil every night. It’s not a polished place with soft music. It’s a fast-paced kitchen where we’re always trying to stay ahead of the orders coming in. We wash the floors every night before we leave, but by the next evening, they’re covered in footprints again. It’s just the way it is in Fatepura. We’ve been here a while and we know the neighborhood, and the people here know us and our food.
