Things are always moving here on Palace Road. Our spot is at T 48, and if you walk past, you’ll probably smell whatever is cooking that day. It gets hot in the kitchen, especially in the afternoons. We have these big pots that we’ve used for years. It’s a lot of manual work, chopping vegetables and making sure the rice is just right. We aren't a big fancy operation with uniforms. It’s just us in our regular clothes, getting the food ready for whoever needs it. Palace Road is usually loud with traffic, so we keep the back door open to get some air. Sometimes we run out of space when there’s a big order, and things get a bit chaotic with the crates. We’ve been based here for a while now. The floor is always a bit slippery from the steam and the oil, but we keep it as clean as we can. It’s a tiring job, standing on your feet all day. But then the food goes out and we start cleaning up for the next morning. Usually, we finish late. It’s just the way it works when you’re dealing with meals. We don’t spend much time on the phone unless someone is calling to check on their timing. It’s a local life, and we know most of the people who come around this part of the road.
