Dal Baati Churma

At Dal Baati Churma, we keep things pretty straightforward. We are located on Sama Road in the Vrijdhara Society, right near the Navrachna School. It is a residential area mostly, so we get a lot of families coming in. Making dal baati takes a lot of time because the baatis have to be baked just right in the oven. The kitchen stays very warm because of that. We start rolling the dough quite early in the morning so they are ready by lunch. The smell of the ghee and the lentils usually fills the whole space by eleven. Our dining area has simple tables and chairs that we've had for years. It isn't a place for a fancy night out, just a spot to eat a heavy meal. Sometimes the school traffic makes it hard for people to park their scooters outside, but they usually find a gap. We don't have a huge staff, just a few of us who handle everything from the cooking to the cleaning. The walls have a few marks here and there, and the lighting is just regular tube lights. We don't really bother with advertisements or anything like that. People in Vadodara know where we are if they want this kind of food. It is honest work and it keeps us busy from morning until we close the shutters at night. We just focus on getting the salt and spices right in every batch.
