Our place is located over at Bagikhana G -3. If you know this part of town, it is pretty easy to find us. We mostly do South Indian food like dosas and idlis. The kitchen has to get started very early in the morning because the batter needs time to sit. We still grind everything ourselves every single day. It is just a small team of us working here. Sometimes things get a little slow if a big group walks in all at once, but we do what we can to keep up. The smell of the sambar stays in the air all day long. We are not trying to be a fancy five-star place or anything. The tables are just basic and the chairs are simple. Our main goal is just getting the food out while it is still hot. It is a lot of repetitive work, flipping dosas on the tawa and filling up small bowls with chutney. We do not use a lot of high-tech machines, just the same pots and pans we have used since we opened. People come here for a quick lunch or a simple dinner with their family. We have seen a lot of kids grow up coming here over the years. It feels like a neighborhood spot because that is exactly what it is. We do not have a marketing team. Most of our time is just spent cleaning up or getting ready for the next rush.
