Shree Durga Caterer

Our place, Shree Durga Caterer, is at 4, Hira Niwas. We are right opposite the Rao Pura Police Station in the Raopura area. It’s a very central part of the city, so it’s always busy. Being near the police station means there is always movement outside. We work out of Hira Niwas, which is an older building. The kitchen is where we spend the bulk of our time. Raopura has these narrow streets that can get very crowded during the day. We have to be careful when we are bringing in supplies. We don't have a big corporate office. Our space is filled with stoves, big pans, and crates of ingredients. We start our prep work very early. The sounds of chopping and the hiss of the gas are the soundtrack to our mornings. We don't have a fancy philosophy. We just cook the food that people ask for. Sometimes we are working on multiple orders at once, and it gets a bit chaotic. We’ve been in this spot for a long time now. The people around Raopura know us. We don't spend money on posters or radio ads. Most people just walk in or call us because they saw us working at an event. It’s a practical way to run a business. We stay focused on the tasks in front of us. When the day is over, we clean up Hira Niwas and get ready for the next one. That is our routine here.
