Rainbow Vada Pav

Rainbow Vada Pav is located right in Dandia Bazar. It is a busy area, and we have been here serving people for a good amount of time. Vada pav is what we do, and we do it all day long. The oil is always hot, and the smell of garlic and potatoes fills the air around our spot. Dandia Bazar can get really crowded, especially during festivals or in the evening when everyone is out. We don't have a big office or a fancy storefront. It’s just a practical setup for making snacks. We go through a lot of buns every single day. My apron usually has some flour or stains on it by noon because it is messy work. We don't worry about being polished; we just want to get the food out to the people waiting. Some customers have been coming to us for years and they know exactly where we are in the bazar. We keep the counter as clean as we can, but it’s hard when things are moving so fast. We don't have a big staff, just a few people helping with the frying and the packing. It’s loud, it’s hot, and it’s always busy. That is just how life is at our place in Dandia Bazar. We keep things simple. Living and working in Dandia Bazar is all we know, and we like it that way even when it gets crazy. It’s just us and the stove.
