Nylon Paubhaji

We are located on the ground floor of Siddhrath Annexe-1, right on the Sama Savli Main Road in Vadodara. If you are familiar with the area, we are quite close to Ambe Vidhyalaya. Most afternoons, you can hear the school bells and the kids shouting as they head home. That is usually when we start getting the big pans ready for the evening. Pav bhaji is what we do here, and we go through a lot of butter and bread every single day. The smell of the spices usually fills up the small space pretty quickly once we start cooking. It isn't a quiet place. The road outside is always busy with cars and bikes heading toward Sama. We have a few tables set out, and people just sit where they can find a spot. Some families come in after they finish their shopping, and sometimes we see the same people every weekend. We don't have a big staff, just a few of us who have been working together for a while now. We know how to handle the rush when it gets dark and everyone wants their food at the same time. The floor gets a bit messy during the peak hours, but we sweep it up when things slow down. It is just a simple shop where we cook and people eat. There isn't much more to it than that. We just stay open until the last of the pav bhaji is sold and the stove is finally turned off.
