New York Pizza

People always ask about the name, but we just liked it when we opened up at Ambawadi Bapu Nagar Cross Road 1. The intersection is always a mess of traffic and people shouting, but inside it is a bit quieter. We spend a lot of time working with dough. It gets under your fingernails and on your clothes. The oven stays hot from the time we open until we lock up at night. We don't have a big team, just a few of us making the pizzas and taking the money. We chop the vegetables by hand every morning on the back counter. The cheese comes in big blocks and we have to grate it down. It is hard work on the arms. The benches are a bit worn out now because so many people sit there while they wait. We don't really do anything special with the decor. There are some old posters on the walls. Most of our customers are locals who live in the apartments nearby. They come in wearing their flip-flops just to grab a quick dinner. Sometimes we run out of certain toppings if the delivery truck is late. That is just how it goes. We try to keep the boxes stacked high so we are ready for the weekend rush. It is a greasy job but it keeps us busy. We just keep the oven running and hope the electricity stays on.
