Jay Ganesh Dining Hall & Caterers

Our place, Jay Ganesh Dining Hall & Caterers, is right on Fatehgunj Gurukul Road. It’s a big space because we have to fit the long tables for the people who come to eat. Then there is the catering side of things, which is a whole different kind of busy. We have these massive stainless steel pots that take two people to carry when they’re full. Most mornings are spent chopping heaps of vegetables and getting the grains ready. It’s a lot of steam and heat in the kitchen. When we have a big event to cater, we’re up before the sun, packing everything into the vans and hoping we didn’t forget the serving spoons. The dining hall gets quiet in the mid-afternoon, which is when we finally get to sit down for a minute. The floor is made of hard tile, and we’re always scrubbing it because of the spills. People from the Gurukul area stop in often, and we know many of them by name. We don't have any fancy decorations on the walls, just the stuff we need to get the job done. Sometimes the noise from the road gets a bit much, but you get used to it. We just focus on getting the food out on time and making sure there’s enough for everyone. It’s honest work, even if it leaves us pretty tired by the time we lock the doors at night.
