Arvind Paani Puri Center

We set up our small stand here at Chhani Road Narsi Chaya near the Juhu Scheme. It is not a big restaurant or anything, just a simple counter where we serve paani puri to anyone who stops by. Every single day starts with a lot of prep work. We have to get the potatoes ready and make sure the tamarind water has the right kick to it. It takes a lot of time to get it just right. Some of our customers like it really spicy while others want it on the sweeter side. We try to remember those little details for the people who come here every day. It gets really crowded in the evenings when everyone is heading home from work. The street can be quite noisy and dusty, but that is just part of being out here. We keep the water covered and wash the bowls as fast as we can. Sometimes we run out of puris earlier than we expected, which is just how it goes sometimes. My hands stay wet most of the day from dipping into the spiced water. We do not have a long menu with fancy items. We just stick to the basics that we have been doing for years. We do not do any advertising or anything like that. People find us because they live nearby or they see the line. It is a lot of standing around, but we just focus on the food.
