You can find Sonal Fancy Dosa at Sarita Sagar Sankul on New Adajan Road. We’re right there in Adajan Dn, not too far from the Swaminarayan mandir. It’s a lively spot, especially in the evenings when everyone comes out for a walk. Our stall—or small shop, really—gets quite hot because of the big flat tawas we use. You can smell the batter cooking from down the street. We have a few different kinds of dosas, some with cheese or different masalas, but we keep the basics the same. The seating is just some simple stools and tables on the sidewalk. It gets crowded and sometimes people have to stand while they eat. We don’t have a lot of space for storage, so we’re constantly bringing in fresh supplies throughout the day. The street noise is always there, with scooters and cars passing by constantly. We stay open pretty late because that’s when most people in Surat like to eat. Sometimes we get the orders mixed up when it’s really busy, but we fix it quick. We aren’t trying to be a fancy restaurant with waiters. It’s just us making dosas for people who are hungry and want something hot. It’s a simple life, flipping dosas and talking to the regulars who stop by every week.
