We are at B/81, Patiala House on the Piplod Umra Road. It’s right in Piplod, Surat, 395007. If you know where the new Passport Office is, we are directly opposite that. We started this kitchen because we wanted to bring the taste of Punjab to Surat. It’s a family-run place. My father oversees the tandoor and my brother handles the deliveries. We make a lot of butter chicken and dal makhani. The smell of the coal fire fills the street in the evenings. We have a few tables inside, but a lot of people just park their cars outside and eat there. The area has become very busy lately. There’s a lot of traffic on the Umra Road now. We spend most of our day preparing the dough and marinating the meats. It’s hard work standing over the heat all day. We use heavy brass pots for the slow cooking. Sometimes we run out of certain items by 10 PM because we only make a set amount. We don't like to waste food. The walls are painted a simple cream color. We have some old family photos hanging near the register. It’s not a fancy restaurant with waiters in suits. We wear our regular clothes and just focus on the cooking. People seem to like the simple way we do things. It feels like our own home kitchen. We just keep the fire going and make sure the food tastes like it should every single night.
