Our kitchen is over in the Pal Bhatha area of Surat, right next to the Shaligram Signature building and near the Sanjiv Kumar Auditorium. It’s a part of town that’s been growing quite a lot lately with new buildings going up everywhere. The restaurant itself is a pretty straightforward setup without much fuss. We have a kitchen that takes up most of the back space, and the front area is where people come to eat or pick up their parcels. We don't have a big corporate team or managers in suits; it's just the cooks and the few of us who work the floor and handle the customers. Every single morning starts with the same routine of getting the fresh vegetables delivered and prepping everything for the noon lunch crowd. We see a lot of local families from the nearby apartments, especially in the evenings when nobody feels like cooking at home after a long day of work. The noise from the street can be a bit loud sometimes, but once you're inside we just focus on the cooking. We don't really have a "mission" or any of that stuff. We just want to make sure the tables are wiped down properly and the food is hot when it hits the plate. Sometimes things get a bit disorganized when it's really busy and every table is full, but we find our way through it somehow. It’s just a local spot where you see the same faces. We keep the decor simple.
