Prayosha Fast Food

We are set up in Nana Varaccha, right opposite the Tulsi Raw House. In this part of Surat, people really love their food, especially in the evenings when the weather cools down a bit. Our shop is not very large, but we make use of every bit of space we have. We started this because we wanted to serve the kind of fast food we like eating ourselves. Most of our customers are from the nearby residential houses who walk over for a quick snack. It can get pretty chaotic around seven or eight in the evening. We have to work fast to keep up with the orders. My wife helps me with the prep work in the morning and I handle the cooking and serving later on. We use a lot of butter and spices because that is the way people around here like it. The sidewalk in front of us is often full of people waiting. We don't have a big staff, just me and a young boy who helps with the washing up. The stove stays hot until we close at night. It is hard on the feet, standing all day, but seeing the same neighbors come back makes it okay. We just keep things moving and try not to run out of stock before closing time. It’s just a basic stall where you get good, hot food without any wait or fuss.
