It’s a heavy thing and it takes a lot of charcoal to keep it going right. The kitchen staff is usually shouting over the noise of the fans and the pans clanking. It’s a busy environment. We have these heavy wooden tables that have seen a lot of use over the years. They have some scratches and marks, but they are sturdy. We don't spend money on fancy tablecloths because they just get stained anyway. Most people who come here are looking for a heavy meal that fills them up. We serve the food in steel plates because they are easy to wash and they don't break. The Ring Road traffic is always humming in the background, like a constant buzzing sound. Sometimes it’s hard to hear the customers if a big truck goes by. We’ve got a few photos on the wall that have faded from the sun. The paint is peeling a bit near the ceiling, but the food is why people come back. We stay late to scrub the floors and the stove. It’s a long day, but we are used to it by now.
