Madhi Ni Khamni

We have been here at Athwalines 4 for a good while now. Every morning starts pretty much the same way, getting the stove going and preparing the khamni. It’s a lot of work before the first customer even shows up, but that’s just how it goes in this business. My hands are usually yellow from the turmeric by ten in the morning. People around here know the shop well, and they stop by when they’re headed to work or just out for a walk. The street gets a bit noisy sometimes with all the rickshaws passing by, but inside we just focus on the food. It’s not a big fancy place or anything like that. We have a few benches and the counters stay busy. Sometimes the weather gets really hot and the steam from the pots makes it feel like a sauna in here, but nobody complains much. We just keep serving until the batches are done for the day. I’ve lived in this area most of my life so I recognize a lot of the faces that come through the door. It feels good when someone says the food tastes the same as it did five years ago. We don't change things much because the old ways work fine. Just simple snacks for people who are hungry and in a hurry. That’s really all there is to it. No big secrets or special stories, just a daily routine we’ve stuck to for years.
