You can find Karnavati Dabeli Center over in Bharthana, specifically at Ghadiyali Pole Mandvi L 5 A. It’s an old part of the area, and the streets are a bit narrow and crowded with shops and people. Our shop is quite small, and most of the space is taken up by the big counter where I assemble the dabelis one by one. I spend my mornings mixing the masalas and getting the spiced peanuts ready for the day. There’s a specific way the potatoes have to be mashed and seasoned, and I’ve been doing it the same way for years without changing much. People around Mandvi know us well, and they usually just walk up and ask for their usual order without even looking at a menu. I don’t have a big staff, so it’s mostly just me or a family member helping out when things get busy. The building itself is very old, with high ceilings and walls that have seen a lot of years go by. It can get a bit stuffy inside during the afternoons, so I usually stay near the front where there’s a bit of a breeze coming from the street. I like watching the people walk by Ghadiyali Pole because it’s a lively place with a lot of history and noise. We don’t use any fancy packaging or branded bags. We just wrap the food up in paper and hand it over. It’s honest work, and it keeps me busy from the morning until the evening when we finally shut the doors.
