Jalaram Khichadi

We are right on the Main Road along Anand Mahal Road. It’s a spot where a lot of people pass by every single day. Jalaram Khichadi is basically just a kitchen and some tables where we serve up food. We spend a lot of time stirring the big pots. Khichadi takes time if you want it to sit right. The steam makes the windows a bit foggy when it’s cold out. We don’t have a big staff, just a few of us making sure the plates are clean and the food is hot. Sometimes the floor gets a bit dusty because of all the boots coming in from the street. We try to sweep it when there’s a quiet minute. People come in when they’re hungry for something that isn't too heavy but fills them up. There isn't any fancy music playing or bright lights. Just the normal sounds of the road outside. We’ve had this place for a bit and the sign is starting to fade a little at the edges. It doesn't matter much as long as the food is ready on time. We open early to get things prepped. Anand Mahal Road is always moving, so we just stay in our corner and do our work. It is a plain shop for plain food. If you’re looking for us, we are right there by the busy intersection. We just keep our heads down and cook until the pots are empty. That's usually how the day goes here.
