Chandan The Omlet Center

You can find our little stall, Chandan The Omlet Center, at Kabir House on University Road in Surat. We are right by Citylight Road, specifically near Bafna Marble. It’s a busy corner of town, and we’ve been cracking eggs here for quite a few years now. Most of our day is spent over a hot griddle, making different kinds of omelets for the people who stop by. We get a lot of students from the university and workers from the nearby shops who want something quick and filling. The place isn't big, but we make it work. It’s mostly about the stove and the fresh eggs we get delivered every morning. We don't have a lot of fancy seating, but people don't seem to mind standing around or taking their food to go. Sometimes the line gets a bit long in the evenings, especially when the weather is nice, but we work as fast as we can to get everyone's order done. We’ve learned over time exactly how people like their eggs cooked. There’s no secret to what we do; it’s just about showing up every day and keeping the heat at the right level. It can be a messy job with the butter and spices, but it’s what we know. If you’re ever walking down Citylight Road and see a bit of smoke from a tawa, that’s likely us doing our usual work for the evening crowd.
