Maharaja Hot Chips

The smell of the oil is the first thing you notice when you get near 7/6 in Hudco Colony. We’ve been frying up chips here in Peelamedu for a long time. It’s a simple setup, just the fryers and the bagging area. We start early in the morning getting everything ready so the batches are fresh. It’s not a quiet place, there is always the sound of the slicer or the oil bubbling away. People from the colony come by in the evenings mostly. They want something to snack on while they head home. We don’t do much else besides make these chips. It gets hot in here, especially in the summer months, but we’re used to it by now. The bags sit on the counter waiting to be picked up. We don’t have fancy seating or a menu with a hundred items. Just the usual stuff people like. Sometimes we run out of the popular ones before the day is over. It’s a small shop and we like keeping it that way because we can see everything that’s happening. The floor gets a bit greasy despite our cleaning, but that’s just part of the trade. If you’re walking through Peelamedu, you’ll find us easily enough just by following your nose. We just keep frying and bagging until the sun goes down.
