Kasa Gelato (Natural Ice-Cream)

Our place is at 73-B in the D.D.A. Flats Phase-II of Katwaria Sarai. It is a pretty well-known part of New Delhi 110016. This is where we make our natural ice cream. The shop isn't very large, but it is where all the work happens. We spend a lot of our time trying out different fruits and new flavors. It often gets a bit messy with all the containers and fresh ingredients everywhere, but that is just part of the process. We have a small staff who all really enjoy ice cream, which makes the job better. The neighborhood has a lot of students and families, so we see the same people coming in every week. It is nice to actually know the people who are eating what we make. We don't have any big marketing people. It is just us. We use the equipment we have and try to keep everything clean and working. Sometimes the freezer makes a bit of a loud humming sound, but we don't even notice it anymore. We aren't trying to become a massive chain or anything like that. We just like making gelato here in Katwaria Sarai. The street outside gets really busy in the evenings when people are out for a walk. We usually keep the door open to get some fresh air. It is just a simple, local business run by people who like what they do.
