You can find us near the Telephone Exchange at Lal Bati Chowk in Sirsa. It’s a very busy intersection with the red light always stopping traffic. We are a vashno bhojnalaya, which means everything we make is strictly vegetarian. There is no meat allowed in our kitchen. We have a lot of locals who come here after their work shift is over. The area is always crowded with bikes and rickshaws and people talking. We’ve been at this spot for a good amount of time. The kitchen is right there in the front so you can hear the pans clanking and see the steam. We don't have air conditioning, just some old ceiling fans that we keep running. Sometimes they make a lot of noise. I handle the money and my cousins help with the serving and cleaning. We buy our vegetables from the local mandi every single morning. If the weather is bad, we might open a bit late. It’s a basic setup for eating. We have long benches for people to sit on together. It makes it easier for big groups. We don’t use any frozen stuff. Everything is made right before the lunch rush starts. Sometimes we run out of the main sabzi by 2 PM and have to make a fresh batch quickly. It’s just a normal local eatery. We don't have a big sign with bright lights. Just the name painted on the wall.
