Bindaas Bawarchi

Our food joint is located on the Dibdih Bypass Road right at Argora Chowk in Ranchi. Being at a major crossroads means there is always a lot of dust and noise from the trucks and cars passing by. We started Bindaas Bawarchi because we knew how to cook good biryani and kebabs. The kitchen is the main part of our place. It is very hot because the tandoor stays lit for most of the day and night. We have some seating area for people who want to eat here, but it is quite basic with just simple tables and chairs. A lot of our business comes from people stopping their cars on the bypass to pick up dinner for their families. We use whatever ingredients are available in the local market each morning. The walls are mostly covered with our menu and maybe a few old posters. We don't have a manager in a suit or anything like that. We are usually just in the back cooking or out front handing over parcels. Sometimes we run out of chicken biryani before the night is over if it has been a busy day. We don't have any big plans to become a chain. We just like being the local spot at Argora Chowk where people can get a heavy meal. It is hard work and our clothes usually smell like smoke by the end of the day.
