Sunny Vaishno Dhaba

You can find our dhaba at shop number 365 on GT Road in Ludhiana. We are right at the Jalandhar Bye Pass Chowk, which is a very busy and noisy intersection. The New Sabji Mandi is just opposite us, so there are always trucks and tempos moving around at all hours. We are a Vaishno dhaba, meaning we only cook vegetarian food. No meat is ever allowed in our kitchen. The location means we stay open for very long hours. We get the market crowd early in the morning and the highway drivers late at night. The sound of horns and heavy engines is something you just stop noticing after a while. Inside, it's a very straightforward setup with steel tables and simple benches. It gets very hot near the tandoor, but that’s where the best rotis come from. We make big batches of dal makhani and mixed veg every day. There is no fancy plating or decoration here. It’s just good, heavy food meant to fill your stomach. I spend my time managing the kitchen and making sure we don't run out of supplies. Dealing with the crowd from the Sabji Mandi can be a bit chaotic sometimes because everyone is in a rush. But we’ve been here at the bye pass for a long time and we know how to handle the pressure. It’s a rough place but it serves a purpose for the people on the road. We just keep the stove going and the rotis coming.
