Prabhu Kripa Chole Bhature

Our little shop is over in the Panesar Market area on Dhandran Road in Dugri. We are right opposite Josef School, so we get a lot of noise from the kids and the parents during the morning drop-off and when school lets out. Making chole bhature means we are standing over hot oil for most of the morning, especially when the breakfast rush starts. The market is a busy place with people coming and going for all sorts of errands. We have a few small tables, but a lot of people just stand around or take their food to go. It is a 141003 area, and we have been part of this Ludhiana neighborhood for a while now. The walls are a bit stained from the steam, and the floor gets a little oily, but we try to keep it as clean as we can. It is a simple life, just waking up early to get the dough ready and the chickpeas soaking. We don't have a menu with a hundred things on it, just what we are good at making. People know us by the smell of the spices drifting out onto Dhandran Road. It is just a local spot where you can get a quick meal without any fuss. The school kids are always running past, and the shopkeepers nearby usually stop in for a bite once they open their own places.
