Meshi Vegiterian dhaba

This spot on Gill Road is where we spend most of our time. Being near Gill Chowk means there is never a quiet moment. We run this vegetarian dhaba and it’s a very basic setup. We have the kitchen in the back and the seating out front. It is mostly people from the local shops or drivers who stop by because they know where we are. We don't have any big signs or bright lights. The address is just Gill Road in Ludhiana, right in the middle of all the noise. We make sure the lentils are cooked right and the bread is fresh. That is the main thing we do every day. Sometimes it gets really crowded around lunch time and people have to wait a bit for a seat. We don't mind the rush. It’s been this way for a long time. The floor is just stone and we have old wooden benches for people to sit on. It’s a bit rough around the edges but it works for us and the people who eat here. We aren't trying to be a big restaurant. We just want to make sure the food is ready on time. You can see the traffic moving outside the door while you sit. It’s just a normal part of life in this part of Ludhiana. We keep the water jars filled and the plates stacked up. It is a lot of work but we just keep doing it.
