Bharla Ghar Punjabi Dhaba sits right on Pakhowal Road in Jodhan. If you are driving through Ludhiana, you probably know the stretch. It’s a typical roadside spot. We have a lot of space for parking, which is good because we get a lot of trucks and people traveling long distances. The air is often dusty from the road, but we try to keep the sitting area as clean as we can. It’s not a fancy restaurant. We have the usual heavy wooden furniture and the lighting is just enough to see what you are eating. In the summer, the heat can be something else, so we keep the fans running at full speed all day. We start the prep work very early, usually before the sun is even up, because the dough needs time and the lentils take hours. Our cooks are from the local area and they don’t follow recipes from books, they just know how it’s done. You’ll hear the sound of the highway all day long, which is just part of being here. Sometimes the power goes out and we have to switch to the generator, but we don't stop the service. It’s just a place to get a filling meal when you are on the move. We don't have a website or anything like that, just the sign out front and the food on the plates.
