Adhunik Caterers is located at 1-Rk on Tandon Rd Kaisarbagh. It's a busy area and the kitchen gets pretty hot when we have a big order to finish. We’ve been here for quite some time now, and the locals know us by the smells of spices and wood fire that drift out onto the street in the mornings. We do a lot of weddings and small family gatherings around this part of the city. Usually, the day starts very early, around four or five, so we can get the vegetables chopped and the rice started. It’s a lot of physical work, moving big heavy pots and making sure the burners are working right. The staff we have are mostly guys from the nearby villages who have been cooking for years. We don't have a fancy menu card with photos. Most people just tell us what they want and we make it happen based on what is fresh at the market. Kaisarbagh can be a nightmare for parking, so we have to be really careful about how we load our delivery trucks. Sometimes things get a bit chaotic when three orders go out at the same time, but we manage to get through it. We just focus on the food and making sure there is enough for everyone to eat. It's not a glamorous job, but it’s what we know how to do. That's our daily life on Tandon Rd and it stays pretty hectic.
