Chillies Catering Unit

You can find Chillies Catering Unit right across from Providence High School on Gandhi D in Nadakkavu. It’s a busy spot with all the school traffic and people walking by. We’ve been in this building for a while now. The space inside is mostly taken up by the big stoves and prep tables. It’s not the quietest place to work because of the street noise, but we’ve gotten used to it. We don't spend a lot of money on painting the walls or buying new furniture. We’d rather spend that on better ingredients for the day's cooking. There’s a lot of coming and going throughout the day. We start early, usually when the streets are still a bit dark. By the time the students start arriving at Providence High School, we’re already halfway through the day's prep. It’s a practical setup. We don't have much of a waiting area because we’re usually too busy in the back. The air in there always smells like spices and steam. Sometimes it’s a bit of a squeeze when we have a lot of people working at once, but we make it work. We've been part of the Nadakkavu community for a long time. It’s just how we make our living. No big secrets or fancy ways of doing things, just showing up and doing the work as it comes. We have a lot of old pots that have seen better days but they still work fine for us. We just keep our heads down and cook.
