Chillies Biriyani Hut

Our place, Chillies Biriyani Hut, is right near Fathima Hospital here in Calicut. We start early in the morning, getting the rice and the spices ready for the day. The kitchen gets pretty hot once the fires are going. We mostly serve people who are visiting the hospital or folks who work nearby and want a quick lunch. It is not a fancy dining room, just some tables and chairs where people can sit down and eat their meal. We focus on the biriyani, making sure the meat is tender and the rice has the right flavor. On busy days, the smell of the spices fills the whole street. We often run out of certain items by the late afternoon if the lunch crowd was bigger than we expected. The staff here are mostly local guys who have been with us for a bit. We do not spend much time on decorations or anything like that. It is all about the food and getting it out to the tables while it is still steaming. Sometimes it gets a bit chaotic when everyone wants their food at the exact same time. We just keep our heads down and keep serving the customers. It is a simple life running a small hut in Calicut. We enjoy the work and seeing the regular faces that come in every week for their lunch.
