Working out of Laxman Tower on Post Office Road in Mango is a bit of a challenge sometimes. We are up on the 3rd floor in Room 9, so we do a lot of climbing up and down those stairs. Mango is always packed with people and traffic, especially on Road Number 4, so getting our supplies delivered can take forever. We have a small kitchen setup where we do all the prep work for the parties we cater. It’s not a big corporate operation, just a few of us who have been cooking together for years. We handle everything from small birthday lunches to bigger family functions. The morning starts with someone going down to the market to find the best vegetables while the rest of us start cleaning the big pots. It gets cramped in the room when we have a big order, with boxes of spices and sacks of potatoes everywhere. We don't have a fancy showroom to show people, we usually just sit down with a notebook and figure out the menu right there at the kitchen table. Carrying heavy cooked food down three flights of stairs is the hardest part of the job, but we’ve gotten used to it. We just focus on making the kind of food we would eat at home. It’s simple, it’s a lot of hard work, and it keeps us busy from morning until late at night here in Mango. There is always another meal to prepare.
