Our place is right in Naya Basti, over in Harharguttu near the Sitla Mandir in Bagbera. It’s a busy little corner of Northern Town and we’ve been operating out of here for some time now. You can usually hear the temple bells while we are chopping vegetables or packing up the tiffins for a local event. It’s a family-run thing mostly, so you’ll see my cousins or my brother helping out with the heavy lifting and the deliveries. We started small, just doing food for people we knew in the neighborhood, and it just stayed that way. The roads around here can be a bit narrow, especially when we are trying to load the truck with all the cooking gear and the gas cylinders. We spend a lot of time in the local markets in Bagbera picking out whatever looks fresh that morning. It’s not a glamorous job, and my hands usually smell like garlic or turmeric even after I wash them ten times. We don’t have any big office or a reception desk, just the kitchen and a small space to keep the accounts. If you come by, you’ll probably find us mid-work with flour on our shirts or busy arguing over how much salt to put in the dal. It’s just how we do things here in Naya Basti. We just want to get the work done and make sure the food is ready when the guests arrive at the venue.
