We are Ishwar Ji Gajak Wale, located at 279 Chaura Rasta. If you know this city, you know that Chaura Rasta is one of those places that stays busy from morning until night. We’ve been making gajak here for a long time. It’s a traditional thing, and we don't try to mess with the old ways too much. Our shop isn't big or modern. It’s got that old-school feel because that’s what we are. We spend hours preparing the ingredients and making sure the crunch is just right. You’ll usually smell the sweetness before you even see the shop. We don’t have a website or any fancy social media. People usually find us by word of mouth or by just walking past. It’s a family-style operation. We all chip in where we can. During the colder months, we’re extra busy because that’s when everyone wants gajak. We don't have any corporate goals or big expansion plans. We just want to keep making what we’ve always made at 279. It’s hard work, especially standing on your feet all day near the heat. But seeing someone enjoy a piece of what we made makes it worth it. We’re just part of the old city fabric. Our hands are usually sticky from the jaggery, and the shop is small, but it's ours. We hope the tradition continues for many more years to come for the next generations.
