We set up S K S Foods right near the Manorma Junction. If you know Panampilly Nagar, you know it's always got something going on. Our place is pretty basic, just a spot where we can cook and people can get something to eat. We don't have a big staff, just a couple of us doing the prep and the serving. The kitchen usually gets really hot by noon, especially on those days when the humidity is high. We don't spend money on fancy signs or expensive furniture. We'd rather just put that into getting the right ingredients for the day. Sometimes the vegetable market doesn't have what we need, so we have to change the menu a bit on the fly. It's a bit disorganized at times, but we manage to get the food out. People who work in the offices nearby come in for lunch. We see the same faces almost every day, which is nice. It makes the work feel a bit more personal. We stay open until the evening rush at the junction dies down. Then we clean up, lock the doors, and do it all again the next morning. It’s a lot of standing and a lot of washing dishes, but it keeps us busy. We don't try to be anything we're not. It’s just a local food business trying to keep things moving. We hope the food is good enough for folks to come back. Some days are quiet, but we still have to do the same amount of cleaning up regardless.
