The Great Indian Biryani & Kebab

We are up on the 3rd floor of the Brookefields mall in the food court area. Stall number 20, that’s us. Being in a mall on Krishnasamy Road means things are always moving fast. We get a lot of people who are tired from shopping and just want to sit down for a bit. The Great Indian Biryani & Kebab isn't a big sit-down place with its own walls, it’s just our counter in the row of other stalls. We start setting up the rice and the meat early before the mall doors even open for the public. The food court can get really loud on the weekends, with kids running around and the music from the mall speakers. We just stay behind the counter and handle the orders as they come. It’s a small space, so we have to stay organized or we’d be tripping over each other. The heat from the grills makes it warm, even with the mall air conditioning. We have a few guys who handle the billing and a few in the back. It’s pretty straightforward. We don't do anything fancy with the presentation, we just put the food on the plates and call out the numbers. Most people are in a hurry, so we try to keep up. It’s just a regular day-to-day job for us in Coimbatore, and we do it every single day without thinking about it too much.
