AMBUR STAR BIRIYANI

We’ve got our shop at Number 20 on East Venkataswamy Road. It’s in the R S Puram area of Coimbatore, right near what people call Snake Street. If you’re from around here, you know the smell of biriyani usually leads you right to us. We’ve been doing this for a long time, and the recipe has stayed pretty much the same. It’s a busy little spot, and it can get a bit crowded during the lunch hour. We don’t have fancy chairs or complicated menus. We just make the biriyani, put it on the plates, and try to keep up with the orders. Sometimes we run out before the day is over, which is just how it goes when things are made fresh. The staff is always moving, carrying trays and clearing tables as fast as they can. We see all kinds of people, from workers on their break to families out for a treat. It’s loud and it’s hot in the kitchen, but we like the energy. We aren't trying to be a five-star place; we just want to serve a meal that tastes like it should. We’ve been on this corner in R S Puram for years and most people know us by now. We just open up in the morning and keep going until the pots are empty. It takes a lot of rice and meat to get through the weekend but we manage it together as a small team. That's the life here.
