Bharathi Park Road is a nice part of Saibaba Colony to be in. We are at No 27, and it’s a pretty straightforward setup we have here. Every morning starts quite early, usually before the sun is fully up, to get the base of everything prepared. You can hear the birds in the park across the way if it’s quiet enough. Our kitchen isn't massive, but we make it work with what we have. There’s always someone chopping something or cleaning up a spill. We don't really bother with big signs or flashy lights. People usually find us because they live nearby or they're walking down the road. Sometimes the humidity makes everything feel heavy, but the fans keep things moving. We go through a lot of ingredients every week, so there’s always a delivery truck dropping off sacks of flour or crates of vegetables. It’s a lot of lifting and moving stuff around. We just try to stay on top of the orders as they come in. Some days are slower than others, which gives us time to catch our breath and maybe sit down for a minute. Then it picks up again in the evening. It’s just a regular food business, nothing more and nothing less. We’ve been here for a while and we know the neighbors. It’s a decent way to spend the day, even if it gets tiring sometimes.
