We’ve been based near Shanker Road in Old Rajinder Nagar for quite some time. This area is always full of students and people rushing around, which gives us a lot of energy to work with. Our kitchen is tucked away where we do all the main prep for the parties we cater. It’s not a glamorous setup, just a lot of stainless steel tables and big burners. We spend our days mostly on the phone or out at the markets picking up fresh supplies. We don't like using pre-packaged stuff if we can avoid it. Most of the people who hire us are from the neighborhood, so we know the local tastes pretty well. It’s a lot of heavy lifting, carrying crates of plates and big containers of food to different venues. We’ve had days where the rain nearly ruined a setup, but we always find a way to make it work. Our staff is small, but we’ve all been together long enough that we don’t need to say much to get the job done. We don't have a big marketing budget or a fancy office for people to sit in. If you want to talk about a menu, we usually just sit in the kitchen or near the entrance. It’s a practical, no-nonsense way of running things. We just want to make sure the food is ready when the guests arrive and that we don't run out of anything. That's really all there is to it.
