It’s usually pretty loud around here since we’re right by the Main Market in Amritsar. Being at Green Avenue means we see a lot of people passing by every single morning. We’ve been at this B-1 spot for a while now. Most days start early before the sun is even fully up because there is always something to clean or prep in the kitchen. Sometimes the delivery truck is late and we have to wait around, but that is just how it goes in this part of town. The neighbors know us well by now. We don't really do anything fancy here. It's just a regular place where we cook what we know. If you walk past the shop, you'll probably hear the clinking of plates or see someone sweeping the front step. The fan inside makes a bit of a humming noise that we’ve just gotten used to over the years. We try to keep things simple because that is what works for us and the people who come in. Sometimes the traffic on the road gets backed up near the market and it gets a bit dusty, but we just keep the doors open and keep working. It isn't a big corporate office or anything like that. It is just a shop with some chairs and tables. We spend most of our time making sure the food is ready on time. That's about all there is to it. The walls have a few marks on them and the menu is just a simple printed sheet, but it works for us.
