New Rajasthan Chat Bhandar

Our chat stall is on Lawrence Road in the main bazar area of Amritsar. It’s a busy spot, especially in the evenings when everyone is out walking. We are right opposite the Bijli Pehalwan Mandir. You can't miss it because of all the people hanging around that temple. We sell chat and snacks, the kind of things people like to eat while they are standing and talking. It's a small place, not a big sit-down restaurant. We spend the whole day chopping vegetables and making the different chutneys. Everything has to be ready before the sun goes down because that's when the crowd really starts coming. It gets pretty loud on Lawrence Road with the horns and the people shouting, but we like the energy. We have been here for a while now and we see the same faces almost every day. It's just a simple snack shop. We don't have a big staff, just a few of us working behind the counter. We try to keep things moving so nobody has to wait too long for their plate of chat. The temple across the street brings a lot of people our way. We just keep our heads down and work. It's a basic business, making food for people on the go. Sometimes the rain makes it hard to stand outside, but people still come. We just keep the counter dry and keep serving the food as fast as we can every day.
