Rajendra Bhojnalaya has been sitting here on Beawar Road in Ajmer for a good while now. We are right by the bypass, so you see a lot of trucks and long-distance travelers stopping by at all hours. It gets pretty dusty and hot out here, especially in the afternoons, but we just keep the fans going and get on with the cooking. Every morning starts about the same way. We get the vegetables in, someone starts the stove, and we get the big pots of dal and sabzi going for the lunch crowd. It is not a fancy setup or anything like that. Just some tables and chairs where people can sit down and have a quick meal before they get back on the road. Most people who come here are just looking for something that tastes like home food because they have been traveling for days. We try to keep things simple. Sometimes the place gets really crowded when a big bus pulls in, and other times it is just a few locals sitting around talking. We have seen the bypass change over the years, with more buildings coming up nearby, but our spot stays pretty much the same. It is just a regular place where we work hard every day to make sure the food is ready on time and the kitchen is kept running without any big fuss or complicated menus to worry about.
