We are located at 903 on Matrix Corporate Road in Prahlad Nagar. This is where we run Bombaywalla Puranpoli Pvt Ltd. It’s an office building, but our hearts are really in the kitchen. We started out as a small family project making puranpoli for our friends. It’s that sweet flatbread filled with lentils and jaggery. Now it’s grown into a real company. We spend a lot of time coordinating with the cooks and the delivery drivers. The office has a few desks and a lot of samples lying around. Usually, there’s a faint smell of nutmeg and ghee even though we don’t do the heavy cooking right here. Prahlad Nagar is a very modern part of the city, so there are always people rushing around outside. We try to keep things grounded. My wife manages the recipes to make sure they haven't changed since we were kids. We have a few computers now to track where the boxes are going, but we still prefer talking to people on the phone. It’s a bit of a juggle managing the staff and making sure the ingredients are fresh every single day. Sometimes the elevator in the building breaks down and we have to carry boxes up nine floors, which isn't fun. But we like what we do. It feels good to see people enjoying a traditional snack in the middle of a busy city life and keeping those old tastes alive.
