Tunda kababi

You will find us at shop number 13 in Mahaveer Market. We are located on the Delhi Gate road, right across from the Dena Bank in Agra. The 282003 area is quite old and has a lot of history. We mostly just do kababs, which is what the name says. It is a very small shop, mostly for people to grab something and go, though we have a couple of spots to stand and eat. We have been doing this for a long time. The recipe we use has been around for years and we do not change it. The street outside is always noisy with rickshaws and motorbikes. Sometimes the smoke from the grill goes out onto the sidewalk, but that is how people know we are cooking. We start early in the afternoon to get the meat ready. It takes a lot of time to get the texture right. We do not have a big menu. We just do a few things and try to keep them the same every day. My father used to help here, and now I run things with my cousins. We do not have a website or anything like that. People just know where we are. It is a busy life, especially in the evenings when everyone is heading home and stops by for a quick roll. We just keep the fire going and serve whoever comes by until the food is gone.
