Our place is over in Kamla Nagar, Agra. It’s a neighborhood spot where we’ve been serving food for quite some time. We don't have a lot of fancy decorations on the walls, just tables and chairs that have seen a lot of use. The kitchen is the heart of the restaurant, and it’s usually quite loud with the sound of pans and the exhaust fan. We get a mix of people, from students to older couples who have lived in Agra forever. Some days are slower than others, especially when the weather is too hot for anyone to want to leave their house. We just keep the doors open and wait for the dinner rush. We handle the cooking and the cleaning ourselves, so there’s always something to do. The menu is mostly things we’ve been making for years without changing the recipes. We don't use any modern marketing tricks to get people in. Most of our customers come because they live nearby and know the food is consistent. It’s a bit of a humble life, running a restaurant in a busy area like this. We deal with the usual problems like late deliveries or a leaky tap, but we just get on with it. It’s not a glamorous job, but it’s what we do. We just want to make sure people leave with a full stomach and no complaints.
