Raj Rasoi Restaurant

We are over here at Hotel Raj Palace in Taj Ganj. It’s a busy part of Agra, as anyone who lives here knows. Most days start early with getting the kitchen ready before the heat really sets in. We’ve been at this 2/26 address for a while now. It’s not a fancy setup, just a place to sit and eat while you’re walking around the area. Sometimes the street outside is so loud with rickshaws and people that you can barely hear yourself think, but that is just how Taj Ganj is. We spend a lot of time chopping vegetables and checking the supplies. Some people come in because they are staying at the hotel, and others just wander in from the street because they’re hungry. The fans are always running to keep things moving. It gets pretty humid during the monsoon, and we just try to keep the floors dry and the food hot. We aren't doing anything revolutionary here, just cooking the usual stuff that people expect when they sit down for a meal. Sometimes we run out of something and have to run to the market quickly. It is just the way we run the place, nothing more and nothing less. We keep the tables wiped down and wait for the next person to walk through the door. It’s a simple life at Raj Rasoi, and we just keep at it every single day without much fuss or complaint.
