Peshawri (ITC Mughal)

Peshawri is located inside the ITC Mughal on Fatehabad Road, over in the Taj Ganj area of Agra. Being in this part of the city means we see a lot of people coming through to visit the local sights. The restaurant is a bit tucked away in the hotel, but once you find us, it is a pretty steady environment. We have our own way of doing things here that might seem a bit old-fashioned to some. The kitchen has these big ovens that stay hot all day long. It gets quite warm in the back, and the workers are always busy with the dough and the skewers. We don't have a lot of fancy decorations on the tables. It is more about the heavy furniture and the smell of the charcoal. The staff knows the menu inside out because it hasn't changed much over the years. We just focus on those few things we do and try to get them right every time someone sits down. It is a bit of a slower pace compared to the busy streets of Taj Ganj outside. We aren't trying to be the most modern place in Agra. We just stick to the way we were taught to cook. It is a lot of routine and hard work, but it keeps the place going day after day. We just open up and do the same job we did yesterday.
