Our place is located at No 14 on 3rd Cross Street in Maharaja Nagar, which is part of the Palayamkottai area in Tirunelveli. We’re really close to the Uzhavar Santhay, so we see all the activity from the market throughout the day. People are always coming and going with their bags of vegetables, and that energy kind of spills over to our street too. The shop itself is pretty modest. We have our prep area in the back and a small counter out front where we talk to everyone who comes in. Tirunelveli heat can be quite intense, so the kitchen gets pretty warm by mid-afternoon. We’ve got a routine that we stick to, starting with the dough and then moving on to the toppings as the day goes on. It’s a lot of standing on your feet and making sure the orders don't get mixed up. We know a lot of the neighbors by name because they’ve been coming to this part of Maharaja Nagar for years. Sometimes we just stand by the door to catch a bit of a breeze when it’s quiet. We don't use any complicated machines, just the standard ovens and our own hands. It’s a practical way to spend the day, and it keeps us connected to what’s happening in the local community. We just keep the lights on and the food moving, day after day, without making much of a fuss about it.
