Top Biryani Zone

We set up Top Biryani Zone over on Ghole Road in the Piplod area. It’s a busy spot, mostly because of the colleges and offices nearby. We spend the whole morning cutting onions and cleaning the rice. The big pots take a long time to heat up properly. If you come by around noon, the smell is everywhere on the street. It’s a small space, so it gets crowded during the lunch rush. Sometimes people have to wait on the sidewalk, but nobody seems to mind too much. We don't have a lot of fancy seating, just some basic tables and stools. It gets a bit messy when we’re busy, with plates moving fast and people asking for extra napkins. We try to keep up with the demand. The Piplod area has changed a lot, with new buildings popping up everywhere. Ghole Road stays pretty consistent, though. We’ve got our regular customers who don't even need to look at the menu anymore. They just tell us what they want and sit down. My hands are usually stained with spices by the end of the shift. It’s tough work, especially when the weather is humid, but we like being part of the food scene here. We just focus on getting the rice right every single day. That’s the main thing for us. We keep serving until the pots are empty, which usually happens by the late afternoon before we start cleaning up for the next day.
